Loaf tin

3 over ripe bananas

2 eggs

1 tsp vanilla bean paste

200 g of light brown sugar

120 ml vegetable oil

80 ml whole milk

1 tsp baking powder

1 tsp of bicarbonate of soda

1 tsp ground cinnamon

1 tsp ground nutmeg

250 g plain flour

150 g roughly chopped ground walnuts

150 g chocolate chips

RECIPE STEPS

Preheat the oven to 175°C

Slice up your bananas with the skins on and add them to the blender jug as well as the eggs, vanilla, sugar, oil and milk. Blend on SPEED 4 until smooth
  • 3 over ripe bananas
  • 2 eggs
  • 1 tsp vanilla bean paste
  • 200 g of light brown sugar
  • 120 ml vegetable oil
  • 80 ml whole milk

Now add in all the dry ingredients except the walnuts/chocolate chips. Blend again on high speed until the flour is fully incorporated. Use the blender spatula to help combine the dry and wet ingredients
  • 1 tsp baking powder
  • 1 tsp of bicarbonate of soda
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 250 g plain flour

Add in the walnuts or chocolate chips and simply stir them through, in order to keep them chunky.
  • 150 g roughly chopped ground walnuts
  • 150 g chocolate chips

Pour into a lined loaf tin and bake for 30 minutes or until a skewer can be poked into the cake and comes out clean

Allow to cool for 10 minutes before slicing in
