Slice the carrots and roughly chop the cabbage. Place them in the stainless steel bowl and start the program (turn down 1 or 2 times). Set the mixture aside.

Clean the shitake mushrooms, avoiding immersing them in water. Remove the stems and cut the caps into 4 or 6 pieces, depending on the size of the mushrooms.
Slice the onions.
Place the shitake mushrooms and onions in the stainless steel bowl (there's no need to rinse it if there's still a little cabbage and carrot) and start the program (turn down 1 or 2 times).

Add the sesame oil to the stainless-steel bowl and fold down with a pastry blender. Remove the cap and start the program.

Then add the reserved cabbage and carrots, and restart the program (still with the stopper removed).

Add the crushed garlic, finely grated fresh ginger, crumbled tofu and soy sauce. Start the program. If necessary, if the stuffing is not sufficiently mixed, turn it down and run the program again. The stuffing is ready!

Place 1 heaping teaspoon of filling on each disk of gyoza dough, then seal, taking care to add a little water to the seal. Make small folds in the closure to seal well. Place the gyosas in the steamer basket.

Rinse the stainless steel bowl and add 500 ml of water. Place the steamer basket on top and start the program. It will take several batches to cook all the gyozas.
