1 carrot

1 celery

320 g of arborio rice

150 ml of white wine

1 of veg stock

750 ml water

1 pinch of salt

1 pinch of pepper

1 tsp of Italian herbs

1 tsp of butter (optional)

1 tbsp of parmesan (optional)

1 tbsp of olive oil

400 g of mushrooms (optional)

300 g of prawns

Chop an onion, carrot & celery in CE metal bowl if using the universal blade or the food processor main blade if you choose to use the dough hook in the Cook Expert.

With the universal blade in EXPERT press AUTO & slowly increase speed to 12. STOP when the veg is chopped to the size of a grain of rice. Or process in the food processor bowl and scrape into the CE with the dough hook.

Add oil and scrape down, then run EXPERT 5 / 3 / 120c.

Add arborio rice, white wine, water and veg stock - if you choose not to use wine, use 900ml of veg stock.
  • 320 g of arborio rice
  • 150 ml of white wine
  • 1 of veg stock
  • 750 ml water

Season the mixture generously with salt, pepper and Italian herbs, and run EXPERT 12mins / 3 / 110c.

Now add prawns, and mushrooms (optional), and run EXPERT 7mins/3/99c
