125 g of unsalted butter
175 g of plain flour
50 g of caster sugar
1 pinch of salt
75 g of caster sugar
30 g of glucose syrup
90 ml of double cream
1 pinch of salt

200 g of roasted peanut
200 g of dark chocolate

Add all of the ingredients for the shortbread into the food processor and use the pulse button to combine.
- 125 g of unsalted butter
- 175 g of plain flour
- 50 g of caster sugar
- 1 pinch of salt

Pour all the shortbread dough into a square baking tin and use a fork to make holes in the base.

Bake the shortbread for 22 minutes at 180°C.

To start the peanut caramel, add the sugar and the liquid glucose to a pan. Once caramelised add the cream and salt.
- 75 g of caster sugar
- 30 g of glucose syrup
- 90 ml of double cream
- 1 pinch of salt

Stir in the butter and the stir in the roasted peanuts.
- 50 g of unsalted butter
- 200 g of roasted peanut

Once the shortbread and the peanut caramel are mostly cooled, spread the caramel over the shortbread.

Melt the chocolate and pour over the caramel.
