500 g of chicory

1 onion

25 g butter

500 ml chicken stock

200 ml single cream

0.5 tsp sugar

1 pinch ground nutmeg

Peel and slice the onion.

Wash the chicory heads briefly under water, discard any damaged leaves and cut out the core with a small pointed knife (to remove bitterness). Cut each head in half lengthwise.
  • 500 g of chicory

Melt the butter in a frying pan and add the onion and chicory. Put the lid on and cook gently for 10 minutes. Season with salt and pepper, add the sugar and pinch of nutmeg.

Pour in the chicken stock and simmer for a further 20 minutes.

Mix everything in the Blender by running the programme: Soups.
  • 500 g of chicory

  • 0.5 tsp sugar
  • 1 pinch ground nutmeg

Finally, add the cream and run the programme: speed 2/10 seconds.
  • 200 ml single cream

Serve hot.
