200 g salted butter

250 g 70% dark chocolate

50 g coffee grounds

4 large eggs

220 g caster sugar

80 g self raising flour

30 g cocoa powder

100 g chocolate chips

Add the butter, chocolate and coffee grounds. Run EXPERT 05:00/speed3/60°C.
  • 200 g salted butter
  • 250 g 70% dark chocolate
  • 50 g coffee grounds

Pour the melted chocolate mixture into a big bowl.

Rinse the bowl and fit the whisk attachment. Add in the eggs and sugar and run BEATEN EGG WHITES 10:00/speed 5/0°C. Pre-heat the oven to 180°C.

Line a 20cm x 20cm brownie tin with baking paper.

Fold the whipped egg mixture into the melted chocolate. Sieve in the cocoa powder and flour into the batter.
  • 80 g self raising flour
  • 30 g cocoa powder

Fold in the chocolate chips saving some for the top.
  • 100 g chocolate chips

Pour into the brownie tin, top with the final chocolate chips and bake for 22-24 minutes.

Allow the brownies to cool completely before slicing.
