Grapefruit and Yoghurt Cake

180 g caster sugar
180 g unsalted butter
4 eggs
220 g self-raising flour
80 g of Greek yoghurt
1 zest grapefruit
1 tsp baking powder
1 grapefruit, juice
200 g icing sugar

Pre-heat the oven to 160°C. Line a large loaf tin with baking paper.

Put all the ingredients into the large bowl of the food processor. Press AUTO and stop when the cake batter in fully incorporated. Roughly 10 seconds.
- 180 g caster sugar
- 180 g unsalted butter
- 4 eggs
- 220 g self-raising flour
- 80 g of Greek yoghurt
- 1 zest grapefruit
- 1 tsp baking powder

Pour the batter into the loaf tin and bake for 60 mins.

Whilst the cake is baking make the drizzle. Combine the sugar and grapefruit juice in a bowl.
- 1 grapefruit, juice
- 200 g icing sugar

Take the cake out of the oven and leave to cool for 10 minutes before adding the drizzle on top.
