Deep fryer or pan, kitchen paper and large bowl

3 red onions

1 red pepper

3 carrots

150 g of white cabbage

30 g of ginger

3 garlic cloves

1 red chilli

1 green chilli

20 g of coriander (roughly chopped)

100 g of chickpea flour (gram flour)

100 g of rice flour

1 tbsp of garam masala

1 tsp of tumeric

1 tsp of cumin seeds

1 tsp of salt

100 g of mango chutney

4 burger buns

200 g of natural yogurt

30 g of ginger (chopped)

1 garlic clove

1 green chilli (sliced)

20 g of coriander

60 g of mint leaves

1 lime (juice)

0.5 tsp of salt

0.5 tsp of sugar

0.5 tsp of black pepper

RECIPE STEPS

Set up your Food Processor with the midi bowl in place. Slice the red onions and red peppers using the 4mm slicing disc. Change the disc to the 4mm grating disc and grate the carrots. Remove the veg and place into a large bowl.

Set up the Food Processor with the main bowl and blade and add the cabbage, ginger, garlic, chillies and coriander. Pulse until all the veg is coarsely chopped and add to the sliced vegetables in a large bowl.

  • 20 g of coriander (roughly chopped)

Add the chickpea (gram) & rice flour to the veg along with the garam masala, turmeric, cumin seeds, and salt. Give everything a really good mix until the mixture comes together and the vegetables are covered in a thick wet batter.

  • 1 tsp of salt

Heat a deep fryer to 170ºC and place spoonfuls of the mixture in the hot oil. Cook for 4-5 minutes until rich golden brown and cooked through. Once done, drain the pakoras on some kitchen paper.

For the mint raita sauce, place all ingredients in the mini bowl of your food processor and blend until smooth. Taste and adjust seasoning and lemon to your liking. Chill until serving.

Season the pakora burgers with salt and serve immediately on some toasted burger buns, along with some mango chutney and the mint raita sauce.
