Creamy tomato soup
1 clove of garlic
0.5 bunch basil
1 pinch salt
1 pinch pepper
1.5 tbsp olive oil
400 ml water
1 tbsp mascarpone
1 small onion
1 kg ripe tomatoes
1 tbsp of tomato purée
1 tsp sugar
1 scoop mozzarella
0.5 ciabatta
50 g pine nuts
0.5 garlic clove

For a quicker version, or when tomatoes are out of season, replace the fresh tomatoes with peeled, tinned tomatoes.

I normally don't like tomato soup much, but I loved this recipe.
Amazing flavour and creaminess. My new favourite.
Could do with some more flavour added. Was OK but not wow.
There is an error in the recipe, at no stage does it say when to add the 400ml of water.
This soup was easy to make and so enjoyed the flavour will be making this again and again
Was looking forward to this, but it's quite bland. May have been my tomatoes which could have been a little riper.
