500 g small potatoes

150 g coarse salt

4 peeled ripe tomatoes

70 ml olive oil

2 tsp apple vinegar

2 small chilli

2 tsp cumin

2 small garlic cloves

1 pinch salt

For a less spicy mojo sauce, replace the chilies by 2 mild tinned peppers.

RECIPE STEPS

Pour 0.5L water into the metal bowl and fit the steamer basket. Wash the potatoes and cover them with coarse salt. Run the program.
  • 500 g small potatoes
  • 150 g coarse salt
Steam | 25:00 / / 120°C

Once the time is up, prick the potatoes with the tip of a knife to check for doneness. If they are too firm, run the program again.

Remove the salt draining the potatoes and moving them around. Set aside.

Fit the food processor and the mini bowl. Place all ingredients in the mini bowl and run for 1 minute.
