Step by step recipe below...
Ingredients:
75ml milk
7g dry yeast
100g sugar
125g butter
2 large eggs
½ orange (zest and juice)
½ lemon (zest and juice)
300g strong white bread flour
50g raisins
50g candied peel
3tbsp brandy
Topping:
1 egg white
Flaked almonds
1 tbsp caster sugar
1 tbsp icing sugar
Method:
1. Combine the milk, yeast, a tbsp of sugar and the butter. Run EXPERT 2 minutes/speed 3/50°C.
2. Add the rest of the ingredients and run BREAD/BRIOCHE. Leave the dough to rest in the bowl and run EXPERT 1 hour/speed 0/30°C
3. Turn the dough out, shape into a ball and place into a cake tin. Cover and leave in a warm place overnight.
4. Preheat the oven to 180°C/160°C fan. Combine the ingredients for the topping and brush on to the panettone once it has doubled in size.
5. Bake in the oven for 45 minutes or until a skewer comes out clean.
