Serves 4 :
500 g yoghurt
4 tbsp caster sugar
1/2 tsp ground cardamom
almond flakes
250 ml milk
10 unsalted pistachio nuts
1 saffron strand
 
1Infuse the saffron in 1 tbsp of water for a few minutes.
2Place all the ingredients except for the almonds in the blender jug. Turn the selector to the "smoothie" setting and liquidise for 30 seconds. Chill in the refrigerator for at least one hour before serving. Meanwhile, toast the almonds lightly in a dry frying pan.
3Serve in tall glasses, scattered with the almonds.
